Grilled Chicken Skewers with Coconut Satay Honey Glaze

Ingredients

For the Chicken and Marinade

  • 500g boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 3 tbsp soy sauce
  • 2 tbsp coconut milk
  • 1 tbsp honey
  • 1 tbsp fish sauce
  • 2 garlic cloves, minced
  • 1 tsp ground coriander
  • 1 tsp turmeric powder
  • 1 tbsp fresh lime juice
  • 1 tbsp vegetable oil

For the Glaze

  • 1/4 cup Coconut Satay Honey Dressing
  • Extra fresh lime juice (optional)

Instructions

Step 1: Marinate the Chicken

  1. Place the chicken pieces into a large mixing bowl or zip lock bag.
  2. Combine soy sauce, coconut milk, honey, fish sauce, minced garlic, ground coriander, turmeric, lime juice, and vegetable oil in a separate bowl to make the marinade.
  3. Pour the marinade over the chicken, ensuring each piece is well-coated. Cover and refrigerate for at least 1 hour, or preferably overnight, to allow the flavours to penetrate deeply.

Step 2: Prep the Skewers

  1. If using wooden skewers, soak them in water for 20–30 minutes to prevent burning.
  2. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

Step 3: Grill the Skewers

  1. Preheat your grill or grill pan to medium-high heat and lightly oil the grates or surface.
  2. Place the skewers on the grill and cook for 4–5 minutes per side, or until the chicken is cooked through and has a slight char. Use a meat thermometer to check that the internal temperature reaches 75°C (165°F).

Step 4: Glaze the Skewers

  1. Immediately after removing the skewers from the grill, brush them generously with Coconut Satay Honey Dressing.
