Ingredients
For the Vegetables:
- 1 red bell pepper, sliced into strips
- 1 yellow bell pepper, sliced into strips
- 1 zucchini, sliced thinly lengthwise
- 1 small eggplant, sliced into rounds
- 1 red onion, sliced into wedges
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
For the Wraps:
- 4 large tortilla wraps (whole wheat or regular)
- 4–5 tablespoons Coconut Satay Honey Dressing (use more as needed)
- 1 cup fresh spinach or mixed greens
- 1/2 cup shredded carrots
- 1/2 cup cherry tomatoes, halved
Optional Garnishes:
- Fresh cilantro leaves
- Lime wedges for squeezing
Instructions
1. Prepare and Marinate the Vegetables
- Preheat your grill or grill pan to medium heat.
- Place all the sliced vegetables in a large bowl. Drizzle with olive oil, then sprinkle garlic powder, smoked paprika, salt, and pepper. Toss well until everything is evenly coated.
2. Grill the Vegetables
- Spread the vegetables out on the grill or grill pan in a single layer. Cook each side for 3–4 minutes, or until you see char marks and the vegetables are softened.
- Remove from the grill and set aside to cool slightly.
3. Assemble the Wraps
- Lay out the tortilla wraps on a flat surface. Spread about 1–1.5 tablespoons of Coconut Satay Honey Dressing evenly on each wrap.
- Layer the spinach or mixed greens, shredded carrots, cherry tomatoes, and grilled vegetables in the centre of the wrap.
- Drizzle an extra teaspoon of Coconut Satay Honey Dressing over the top for extra flavour.
4. Roll the Wraps
- Fold in the sides of the tortilla, then roll it up tightly from the bottom. Slice in half diagonally if desired.
5. Serve
Serve immediately with lime wedges for an extra zesty punch. Sprinkle fresh cilantro over the wraps if you like. These wraps make a perfect light lunch, picnic snack, or grab-and-go meal.
Flavourful Finishing Touch
The Coconut Satay Honey Dressing provides a creamy, nutty base with a hint of spice that perfectly complements the smoky char of the grilled vegetables. With its deep, aromatic profile, this wrap is a delightful vegetarian treat that even meat-lovers will enjoy!
